I'm looking to build some giant plywood volumes for our gym, and I'd just like to know if there is anything specific I should keep in mind while designing/constructing these.

Purchase them from a professional company. You will save time and money, plus they won't look homemade.

Make sure your back cuts are correct so they sit flush to the wall. Start with a small three sided one and then work at larger sizes. Bondo works great to fill gaps, Sand and paint makes texture paint.
take pictures and good luck.

Careful with the word "giant". the first volumes i made were really big, and while they were cool at first, they really interrupted the flow of the wall and after about a year, we took them all down and cut them to be much smaller.

I would agree with Jbrunson to be careful with size, make sure that everything you make can work on all wall angles. Volumes that stick out to far are useless on vertical or slightly overhanging lead terrain. Go long and skinny, like a triangle that is 1 to 2 feet wide and 4 to 6 feet long but only sticks out 1 foot or less. Spend more time thinking about placement on your walls than size, and make them versatile as you may have them for years if they are made right.
